Mama´s Chicken with Carrot Rice

Ingredients

For the Mama's Chicken:

  • 2 tbsp butter
  • 2 tbsp olive oil
  • 2 tbsp chopped garlic
  • 4 chicken breasts
  • Salt & black pepper (to taste)
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 cup mushrooms, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Black pepper & oregano powder (to taste)
  • Juice of 1 lime
  • 1 cup chopped cilantro
  • 1 cup shredded mozzarella

For the Carrot Rice:

  • 2 cups rice
  • 2 cups water
  • ½ tbsp butter
  • 1 cup chicken broth
  • 1 carrot, grated
  • ½ cup corn kernels
Directions
  1. Brown the chicken
    • Heat butter and olive oil in a pan. 
    • Add garlic and sauté briefly.
    • Season chicken breasts with salt and black pepper
    • Then cook just until golden brown. 
    • Remove and set aside.
  2. Prepare the sauce
    • In the same pan, add onion, red bell pepper, and mushrooms and sauté until softened.
    • Add chicken broth, heavy cream, black pepper, and oregano then stir well.
    • Add lime juice and let simmer for a few minutes.
  3. Finish cooking the chicken
    • Return the chicken breasts to the pan and top with mozzarella and chopped cilantro.
    • Cover and let cook for about 8 minutes or until chicken is cooked through and cheese is melted.
  4. Cook the rice
    • In a pot, combine rice, water, butter, and chicken broth. 
    • Bring to a boil.
  5. Add the rest of the ingredients
    • Lower heat, add grated carrot and corn 
    • Simmer until rice is cooked and fluffy.
  6. Plate up and serve
    • Add the Mama's Chicken to the plate
    • Spoon some of the sauce over the chicken. 
    • Add the Carrot Rice to the plate.
    • Garnish with finely chopped cilantro and serve.
