Christmas Sugar Cookies

Ingredients
  • 2¾ cup all purpose flour
  • 1.25 cups granulated white sugar
  • 1 cup unsalted butter room temperature
  • ½ teaspoon salt
  • 1 egg at room temperature
  • 1.5 teaspoon vanilla extract
  • Red food color
  • Green food color
  • Icing 
Directions
  1. In a bowl sift together all purpose flour and salt. Set aside.
  2. In the steel bowl of your stand mixer fitted with paddle attachment or using your hand mixer beat together butter and sugar till smooth and creamy, around 2 minutes.
  3. Add in the egg, vanilla extract and mix till combined.
  4. Now add the flour mix in 3 parts, mixing well after each addition.
  5. You will know the dough is done when it starts sticking to the paddle attachment.
  6. Remove dough and place it in a cling sheet.
  7. Wrap and refrigerate for 2 hours or overnight.
  8. Once chilled, roll the dough to ¼ inch thickness.
  9. Cut out cookies using your cookie cutters of your choice. Repeat till entire dough is finished.
  10. Arrange all the cookies in a baking sheet lined with parchment paper, leaving 1-2 inch space between them.
  11. Place the baking tray in the refrigerator for 1 hour.
  12. Preheat oven to 350 F degrees.
  13. Take out the tray from the refrigerator and bake at 350 F degrees for 9-11 minutes. The time will vary depending on the size of the cookies. My cookies were huge so I baked them for 9-11 minutes.
  14. Take out of the oven and let them cool down in the baking tray for 5 minutes.
  15. Transfer on to a wire rack to cool completely.
  16. Once cooled, make royal icing and decorate the cookies.
