Special Ribs with Vegetable Rice

Ingredients

Ribs Ingredients:

  • 3 lbs pork ribs
  • 1 bottle of cooking wine
  • 1/4 cup vegetable oil
  • 6 sugar cubes
  • 2 cups cooking wine
  • 3 cups water
  • Light soy sauce (to taste)
  • Oyster sauce (to taste)
  • 2 star anise
  • 1 tbsp chopped ginger
  • 2 tbsp chopped garlic
  • 2 stalks green onion
  • 1 bay leaf
  • Salt, black pepper, paprika, garlic powder (to taste)

Rice Ingredients:

  • 2 cups rice
  • 3 cups water
  • 1 tbsp butter
  • Salt to taste
  • 1 can mixed vegetables
  • 2 broccoli florets (bouquets)
  • 10 cherry tomatoes
Directions

Ribs Instructions:

  1. Wash and prep the pork ribs.

  2. In a pot, pour in 1 bottle of cooking wine and bring it to a boil for about 3 minutes to clean the ribs. Drain.

  3. In a large pan or pot, heat 1/4 cup vegetable oil. Add the sugar cubes and stir until they melt and turn into a caramel color.

  4. Carefully add the ribs and stir well to coat with the caramel.

  5. Pour in 2 cups cooking wine and 3 cups water.

  6. Add light soy sauce and oyster sauce to taste.

  7. Add star anise, chopped ginger, chopped garlic, green onion, bay leaf, and season with salt, black pepper, paprika, and garlic powder.

  8. Cover and simmer on low heat for about 1.5 to 2 hours until ribs are tender and sauce thickens.

Rice Instructions:

  1. Rinse the rice and place in a pot with 3 cups of water, butter, and salt.

  2. Bring to a boil, then lower heat and cook covered until rice is done.

  3. Steam or sauté the mixed vegetables and broccoli until tender.

  4. Cut the cherry tomatoes in half.

  5. Mix the vegetables and tomatoes with the cooked rice before serving.
