Pork Belly Special With Roasted Sweet Potatoes & Pumpkin

Ingredients

For the Pork Belly Special:

  • 2 packs pork belly
  • 1 can Pepsi or Coca-Cola
  • 1 onion, sliced
  • 2 tbsp chopped garlic
  • 1 tbsp salt
  • ¼ tsp black pepper
  • 3 tbsp soy sauce
  • 3 tbsp BBQ sauce
  • Fresh parsley, chopped

For the Roasted Sweet Potatoes & Pumpkin:

  • 4 large potatoes, cut lengthwise
  • 1 piece pumpkin, cut into 4 parts
  • Salt
  • Garlic powder
  • Paprika
  • Vegetable oil for roasting
Directions
  1. Prepare the Pork Belly & Preheat Oven
    • Place the pork belly in a bowl and pour the soda (Pepsi or Coca-Cola) over it.
    • Let it rest for about 20 minutes, then drain the liquid.
    • Preheat oven to 200°C (400°F).
  2. Roast the Sweet Potato & Pumpkin
    • Place sweet potato and pumpkin pieces on a baking tray.
    • Drizzle with vegetable oil and season with salt, garlic powder, and paprika.
    • Roast for 30–40 minutes, or until golden and tender.
  3. Cook the Pork Belly 
    • While the veggies are roasting, cook the pork belly.
    • Heat a pan and sauté the sliced onion and chopped garlic until fragrant.
    • Add the pork belly and cook until it starts browning.
    • Season with salt, black pepper, soy sauce, and BBQ sauce.
    • Cook until the pork is well coated and tender.
  4. Plate up
    • Remove the veggies from the oven and let cool slightly. 
    • Add the pork belly to the plate.
    • Add the roasted veggies to the plate.
    • Garnish with chopped parsley and serve.
