Plantain and Stuffed Chicken

Ingredients
Plantain ingredients
- 2 green bananas, half-boiled and grated
- Salt and black pepper, to taste
- Vegetable oil, for frying
Topping
- 2 cans tuna, drained
- 1 can mixed vegetables
- 1 tomato, chopped
- ½ onion, finely chopped
- 1 tbsp chopped cilantro
- 1 cup mayonnaise
- Juice of 2 limes
- Salt and black pepper, to taste
Stuffed chicken ingredients
Ric
- 2 cups white rice
- 3 cups water
- Salt, to taste
- Turmeric powder, to taste
- ½ cup chopped parsley
Chicken
- 4 chicken breasts, sliced in half
- Salt, black pepper, onion powder, garlic powder, turmeric powder (to taste)
- 3 tbsp mayonnaise
- 2 tbsp mustard
- 2 tbsp ricotta cheese
- 2 tbsp chopped garlic
- 2 tbsp chopped parsley
- 8 slices ham
- 3 cups shredded mozzarella cheese
- Olive oil
- Aluminum foil baking dish
Sauce
- 8 mushrooms, sliced
- 1 cup onion, chopped
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- Olive oil
- 1 tbsp butter
- Worcestershire sauce, to taste
- 1 tbsp tomato paste
- 2 tbsp water
Directions
Plantain:
- Peel, half-boil, and grate the green bananas. Season with salt and black pepper.
- Heat vegetable oil in a pan.
- Form the grated banana into small portions and lightly fry until golden. Set aside.
- In a bowl, mix tuna, mixed vegetables, tomato, onion, cilantro, mayonnaise, and lime juice.
- Season to taste with salt and black pepper.
- Fill the fried banana portions with the tuna mixture and serve.
Rice
- Cook the rice with water, salt, and turmeric.
- Once cooked, mix in the chopped parsley and set aside.
Chicken
- Preheat the oven to 350°F (180°C).
- Season the chicken breasts with salt, pepper, onion powder, garlic powder, and turmeric.
- In a bowl, mix mayonnaise, mustard, ricotta cheese, garlic, and parsley.
- Layer the baking dish with olive oil.
- Place chicken in the dish, add rice filling, ham slices, the sauce mixture, and mozzarella cheese.
- Cover with foil and bake until the chicken is fully cooked and the cheese is melted.
Sauce
- Preheat the oven to 350°F (180°C).
- Season the chicken breasts with salt, pepper, onion powder, garlic powder, and turmeric.
- In a bowl, mix mayonnaise, mustard, ricotta cheese, garlic, and parsley.
- Layer the baking dish with olive oil.
- Place chicken in the dish, add rice filling, ham slices, the sauce mixture, and mozzarella cheese.
- Cover with foil and bake until the chicken is fully cooked and the cheese is melted.
