Galinja di Curason with Mixed Fried Rice

Ingredients
For the Chicken:
- 4 chicken breasts
- 2 cups flour
- 4 eggs
- 2 tbsp chopped garlic
- Salt, black pepper, paprika powder
- ½ cup chopped parsley
- 1 cup shredded parmesan cheese
- 2 tbsp butter
- Olive oil
For the Mixed Fried Rice:
- 2 cups cooked white rice
- 4 tbsp sunflower oil
- 2 tbsp chopped garlic
- 1 red onion, chopped
- 1 sausage, chopped
- 1 cup ham, chopped
- ½ each of red, green, yellow, or orange bell pepper, chopped
- 1 tbsp butter
- ½ cup chopped cilantro
- Paprika powder, black pepper, curry powder
- 2 tbsp light soy sauce
Directions
- Prepare the chicken:
- Season chicken breasts with salt, black pepper, and paprika powder.
- Coat them in flour, then dip in beaten eggs.
- Mix chopped parsley and parmesan cheese, and coat the chicken in this mixture.
- Cook the chicken:
- Heat olive oil and butter in a pan and cook the chicken until golden brown and fully cooked.
- Set aside.
- Prepare the sauce:
- In a small pan, melt butter and sauté garlic until fragrant.
- Add chicken stock, lime juice, and chopped cilantro.
- Let it simmer for a few minutes, then add the chicken back into the sauce to absorb the flavors.
- Prepare the vegetables:
- In a pan with a little butter or oil, cook the spinach and grated carrot until tender.
- Serve together with the boiled potatoes and cassava(yucca).
- Prepare the fried rice:
- Heat sunflower oil and butter in a large pan.
- Sauté garlic and onion until soft.
- Add chorizo, ham, and bell peppers.
- Season with paprika powder, black pepper, and curry powder.
- Cook until lightly browned.
- Add the cooked rice:
- Add in the cooked rice and mix well with the other ingredients.
- Stir in soy sauce and chopped cilantro, mixing until everything is well combined.
- Plate up and serve:
- Add the chicken to the plate and drizzle the sauce on top.
- Add the potatoes and cassava to the plate and top with paprika.
- Add the fried rice to the plate.
- Garnish with chopped cilantro or parsley and serve.
