Drumstick Chicken with Aros Moro

Ingredients
For the Chicken drumsticks:
- 2 packs cleaned chicken drumsticks
- 1 pack vegetable broth
- Water (as needed)
- Salt, black pepper, paprika (to taste)
- 3 tablespoons chopped garlic
- 1 tablespoon soy sauce
- 2 cups sliced mushrooms
- 1 chopped onion
- ½ chopped red and green bell pepper
- 1 cup white wine
- 1 tablespoon mustard
- 2 tablespoons ketchup
- 1 cup chopped parsley
- 1 cup plain yogurt
For the Aros Moro:
- 2 cups rice
- 3 cups water
- 1 can red kidney beans (with liquid)
- Salt and black pepper (to taste)
- 1 tablespoon butter
For fried banana:
- 1 banana, sliced
- Oil for frying
Directions
- Stew the chicken
- In a large pot, add the chicken drumsticks, vegetable broth, water, salt, black pepper, and paprika.
- Cover and cook for 15 minutes over medium heat.
- Add the chopped garlic and soy sauce. Stir well, cover again, and cook for another 15 minutes.
- Remove the chicken and set aside.
- Add in the vegetables
- In the same pot, add the mushrooms, onion, and bell peppers.
- Sauté until soft.
- Add complexity
- Pour in the white wine and let it simmer for a few minutes.
- Stir in the mustard and ketchup.
- Add the rest
- Return the chicken to the pot.
- Add the chopped parsley and yogurt.
- Cook until the sauce thickens and the chicken is fully tender.
- Prepare the rice
- In a separate pot, melt the butter.
- Add the beans with their liquid.
- Fill pot with water then season with salt and pepper.
- Cook the rice
- Bring the pot to a boil.
- Add the rice.
- Cover and cook on low until rice is soft and water is absorbed.
- Fry the banana
- Heat oil in a fry pan.
- Add sliced banana and fry until golden on both sides.
- Plate and serve
- Add finished rice to the plate.
- (Optional) Use a small bow to form the rice into a mound for better presentation.
- Add the chicken and banana.
- Top with chopped parsley as garnish.
