Drumstick Chicken with Aros Moro

Ingredients

For the Chicken drumsticks:

  • 2 packs cleaned chicken drumsticks
  • 1 pack vegetable broth
  • Water (as needed)
  • Salt, black pepper, paprika (to taste)
  • 3 tablespoons chopped garlic
  • 1 tablespoon soy sauce
  • 2 cups sliced mushrooms
  • 1 chopped onion
  • ½ chopped red and green bell pepper
  • 1 cup white wine
  • 1 tablespoon mustard
  • 2 tablespoons ketchup
  • 1 cup chopped parsley
  • 1 cup plain yogurt

For the Aros Moro:

  • 2 cups rice
  • 3 cups water
  • 1 can red kidney beans (with liquid)
  • Salt and black pepper (to taste)
  • 1 tablespoon butter

For fried banana:

  • 1 banana, sliced
  • Oil for frying
Directions
  1. Stew the chicken
    • In a large pot, add the chicken drumsticks, vegetable broth, water, salt, black pepper, and paprika.
    • Cover and cook for 15 minutes over medium heat.
    • Add the chopped garlic and soy sauce. Stir well, cover again, and cook for another 15 minutes.
    • Remove the chicken and set aside.
  2. Add in the vegetables
    • In the same pot, add the mushrooms, onion, and bell peppers. 
    • Sauté until soft.
  3. Add complexity
    • Pour in the white wine and let it simmer for a few minutes.
    • Stir in the mustard and ketchup.
  4. Add the rest
    • Return the chicken to the pot.
    • Add the chopped parsley and yogurt.
    • Cook until the sauce thickens and the chicken is fully tender.
  5. Prepare the rice
    • In a separate pot, melt the butter.
    • Add the beans with their liquid.
    • Fill pot with water then season with salt and pepper.
  6. Cook the rice
    • Bring the pot to a boil.
    • Add the rice.
    • Cover and cook on low until rice is soft and water is absorbed.
  7. Fry the banana
    • Heat oil in a fry pan.
    • Add sliced banana and fry until golden on both sides. 
  8. Plate and serve
    • Add finished rice to the plate.
    • (Optional) Use a small bow to form the rice into a mound for better presentation. 
    • Add the chicken and banana.
    • Top with chopped parsley as garnish.
