Serve with steamed, julienned vegetables (carrots, peppers, and zucchini).
            
                
                    
                        Ingredients
                        
	- 1 L (4 cups) fresh baby spinach
 
	- 4 pangasius fillets
 
	- To taste, salt and pepper
 
	- 1 onion, thinly sliced
 
	- 2 carrots, grated
 
	- 5 mL (1 tsp.) olive oil
 
	- 125 mL (1/2 cup) grated light mozzarella cheese
 
 
                     
                 
                
                    
                        Directions
                        
	- Preheat the oven to 200°C (400°F).
 
	- Microwave or steam spinach for 1 minute, then distribute it evenly over the bottom of a baking dish.
 
	- Place the pangasius fillets on top of the spinach and season to taste.
 
	- Fry the onions and carrots in the oil for 2 or 3 minutes then spread them evenly over the fish fillets.
 
	- Sprinkle cheese over top and bake for 12 to 15 minutes.
