FLORENTINE PANGA FILLETS

Serve with steamed, julienned vegetables (carrots, peppers, and zucchini).
Ingredients
  • 1 L (4 cups) fresh baby spinach
  • 4 pangasius fillets
  • To taste, salt and pepper
  • 1 onion, thinly sliced
  • 2 carrots, grated
  • 5 mL (1 tsp.) olive oil
  • 125 mL (1/2 cup) grated light mozzarella cheese
Directions
  1. Preheat the oven to 200°C (400°F).
  2. Microwave or steam spinach for 1 minute, then distribute it evenly over the bottom of a baking dish.
  3. Place the pangasius fillets on top of the spinach and season to taste.
  4. Fry the onions and carrots in the oil for 2 or 3 minutes then spread them evenly over the fish fillets.
  5. Sprinkle cheese over top and bake for 12 to 15 minutes.
